Recipe for Apple Bran Muffins
You will need:
1 cup pastry flour (whole wheat)
1/4 teaspoon of ground cloves
2 1/2 teaspoon of baking powder
80 ml cup of milk
1 1/4 cup bran
1 cup chopped apples (prefferably green apples)
3/4 teaspoon of nutmeg
180 ml maple syrup
60 ml butter
2 eggs
You may also add 1 cup of raisins
Instructions:
Mix in flour, baking powder, nutmeg, cloves, and bran. Just set aside.
Combine eggs, buttermilk, and maple syrup; fold in previously prepared flour mixture.
Add in the apples and raisins.
Pour into muffin tins (oiled) and warm in oven at 350 degrees until tops split for 15 to 25 minutes.
Serves 12
