You will need:
160 ml of buttermilk
4 pieces of catfish fillets
1/2 teaspoon pepper (cayenne)
2 tablespoons of butter
15 ml of vegetable oil
1 tablespoon of minced parsley
1 lemon (wedges)
1 tablespoon of grated lemon peel
Instructions:
In a shallow dish, mix in lemon peel, cayenne, flour, and cornmeal
Add salt for seasoning.
In a separate shallow dish, pour in buttermilk.
Dip each of the fish first into the buttermilk, then to the cornmeal mixture for coating.
Set aside for at about 15 minutes to let the coating stick to the fish.
Over a medium-high heat flame, melt butter with oil in a heavy large frying pan.
Start cooking the fish for about 4 minutes per side of the fish or until crust is golden brown.
Place the fish to platter.
Sprinkle in parsley.
Lastly, garnish fish with lemon wedges.
Serves 4
